1-1/2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
3/4 cup (1-1/2 sticks) butter, softened
1 cup firmly packed brown sugar
1 cup mashed ripe banana (about 2 bananas)
1-3/4 cups old-fashioned oats, uncooked
1 package (12 oz) chocolate chips
1 cup chopped walnuts (optional)
Preheat oven to 350ºF.
Combine flour, baking soda, and salt, and set aside.
Cream butter and sugar. Mix in egg and banana. Add flour mixture, mix until blended. Stir in oats, chocolate, and walnuts. Scoop onto sheets and press down slightly. Bake 12-14 minutes. Cool on sheet 5 minutes then transfer to a rack. Yield: 3 dozen cookies.
