I am sorry I have been too busy this month to bake & blog. I even made this fudge in the microwave because I had very little time to make it, and because the recipe says so. 🙂 Definitely use a big bowl for this so as to avoid a sticky mess.
1/2 lb. marshmallows (4 c. mini or 32 lg.)
1/4 c. butter
2/3 c. evaporated milk
1 1/2 c. sugar
1/4 tsp. salt
1 (12 oz.) pkg. chocolate chips
1 tsp. vanilla
1/2 c. nuts
Combine marshmallows, butter, milk, sugar and salt in 3 quart casserole or bowl. Cook until boiling (about 6 minutes.) Remove from microwave and stir. Cook 3 more minutes. Take out of microwave and add chocolate chips. Beat with electric mixer until chips are melted. Add vanilla and nuts. Pour into buttered 9 inch pan. Let cool, then put in refrigerator.
