Photo Friday! {Portland Recap}

I know this should have been posted last week, but I honestly forgot all about it.

We saw this sign and a lot (but not all of them had that koala sticker on the head). I think they should post these signs in San Francisco, too.

One of the first places we went to was Moonstruck Chocolate Company. Their chocolates were good, but some were just too sweet to want more.

Speaking of chocolate, we went to Stumptown Coffee, where we tried this hot chocolate, and of course, their coffee. It was as good as the small local (in SF) coffee shops such as Blue Bottle or Four Barrel.

We also went to Roscoe’s, and tried the stouts they had on tap that week. Mike got the taster pictured, and I got the double chocolate. (Yes, more chocolate. Note: this was not all in one day.)

Portland-Kenny&Zukes It was Purim while we were in Portland, so eating a hamentashen was required. (Though we probably would’ve gotten one anyway.) This was from Kenny and Zuke’s Deli. It is of the tea I got at breakfast at Songbird Cafe one day. Coffee, Coffee, Coffee! {Recipe}

First off, let me apologize for not writing anything for a long(ish) time. I have been busy with school and work and, well, have used my time to focus on other things (such as playing a certain game on Facebook) when I should have been editing photos and posting on here. So so sorry. Really. I love writing blog posts and everything, and sharing fun things with you. AND I am sorry I have not posted a recipe on here in an even longer time. So here’s just a few to get things rolling.

As you may already know, I like doing things in more than one way. This time around, I used coffee in three different recipes. For starters, I tried making coffee ice cream, but that turned out to be less than desirable.

The next recipe I tried was this Hot Fudge Pudding Cake, from Delish. Instead of making one large cake, I made cupcakes, which were good, but a bit sticky. I called them muddy cupcakes because they were so moist and soaked through with coffee.

The third recipe I tried was a version of rice krispies that involved chocolate and coffee, among other things. It had been years since I made anything in the rice krispie treat realm.

Anyway, my treats do not look as dark/chocolatey as the pictures shown on Shutterbean, but are just as tasty. Also, I did not add dried cherries or extra ‘mallows, as the recipe calls for. I figured it was chock-full of stuff as it was. Feel free to change up the mix-ins as desired.

Coffee Chocolate Marshmallow Krispies

recipe adapted slightly from Christina Tosi of Milk Bar via Rachael Ray Magazine

  • 1 stick salted butter
  • 2 bags (10 oz. each) mini marshmallows
  • 5 cups crispied rice cereal
  • 2 cups salted roasted almonds, coarsely chopped
  • 1 1/2 cups dried cherries, chopped
  • 2 teaspoons ground coffee (not instant)
  • 1/4 teaspoon coarse salt
  • 1 cup semi-sweet chocolate chips
  • cooking spray

Line a 9 inch square baking dish with foil and spray lightly with cooking spray. In a 10-12 quart pot, melt the butter over medium low heat. Add 10 cups mini marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes; remove the pot from the heat.

Using a wet spoon or spatula, fold in the rice cereal. Sprinkle in the almonds, cherries, ground coffee & salt; fold quickly to distribute. Sprinkle in the chocolate chips and remaining mini marshmallows; fold gently to distribute.

Spoon mixture into the prepared baking dish. Using slightly damp hands or a wet spatula, press into an even layer. Let cool completely and cut into square to serve.

Photo Friday! {Plus Foodie Pen Pal Reveal}

This week is another “just testing my camera” week because I am dopey and forgot to bring it to the restaurant we went to for dinner last night. Also, since I am writing this right before leaving for the airport, I have not edited any of these. This will truly be a test to see the quality of pictures my camera gives me. Forgive me for the blurriness in advance, won’t you? Next week should be chock-full of great (edited) photos from this weekend because I am going away to New York for Labor Day weekend!

Spaghetti and shrimp and peas for dinner this week. Easy and fast dinner I recommend you make for dinner one night.

I’ll give you one guess what I used these ingredients for. Hint: the title of these treats is on the blue box.

Found a leaf in my hot chocolate at Four Barrel this morning. So pretty!

Wait! Did you say hot chocolate? I don’t see that on the menu. That’s what you are thinking, right?  Well, I know about the “secret menu”. They make their hot chocolate with Dandelion Chocolate, who, by the way, have a new bar! Now you know!


Lastly, it is Foodie Pen Pal reveal time! I got all sorts of goodies this time. According to my pen pal this month, Sandra, they are all locally made. In case you can’t tell what it is I got, it is Tim’s Potato Chips, Annie’s Homegrown Macaroni and Cheese, Moonstruck Milk Chocolate, Propeller Chocolate chip Energy bar Mix, and Cary’s English Toffee. All good things.

What I Am Reading Wednesday

Okay, so I’ve been away for a week. BUT, I do have a lot to share with what I’ve been reading and what I hope to share in the next few weeks!

So, what I’ve been reading:

I think this is great and that supermarkets should be allowed to do this in the U.S., too. I don’t know why farmers would want to hide what they are doing, if they are doing nothing wrong. :)

Speaking of doing nothing wrong, these Americans have been helping out their community.

And, if you are as much of a fan of This American Life & Ira Glass as I am, you would enjoy reading this.

I felt like this article was written just for me; it was just the advice I was looking for. And on a related note: this advice.

Since this is a food blog, I guess, really, I should be posting about food articles I’ve enjoyed recently. Like this one, about what the world eats.

Or, how about this one? For all of you pie-lovers out there. By the way, just a little survey: cake or pie? (Answer in the comments!)

For a more savory treat, (though you could make pie crust with lard) an article about lard making a comeback.

And, since it was recently what would have been Julia Child‘s 100th birthday, let’s all learn to eat the way that she did!

So, that’s what I’ve been reading. As I’ve said before, I have been working on some recipes I’d like to share soon, including some good ol’ American corn. I’ve also been making some things with coffee, and have another foodie pen pal box to pick up from the post office! Box of Delicious! {Foodie Pen Pal June & Coffee Brownie Recipe}

This month, as a part of the Foodie Pen Pals, I received a box from Heather and sent a box to Dustin.

A few weeks ago, I gave you a peek inside the box I got from Heather. Now it is finally time for the reveal!

Here’s what I got:

In case you can’t read all the labels, it’s Trader Joe’s Dark Chocolate Bar-Caramel with Black Sea Salt, Dark Chocolate Almond Toffee, Dark Chocolate (filled with) Speculoos Cookie Spread, Justin’s Organic Peanut Butter Cups, Artisana Pecan Butter, Jessica’s Vanilla Maple Granola, Artisana Coconut Butter, and Trader Joe (Jaques) Fleur Del Sel Caramels. (Heather did say she loves Trader Joe’s in her note, which, by the way, is the card with the cherries on it in the background.)

For Dustin, I used some of the coffee from last month’s box to make brownies. I really like the idea of using something from the last box to forward on to the next one. Just a fair warning for the other foodie pen pals reading this right now.

I forgot to include the recipe in Dustin’s box, so I am putting it here:

Ingredients

  • Nonstick vegetable oil spray
  • 2 cups sugar
  • 15 tablespoons (2 sticks minus 1 tablespoon) unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 3 tablespoons finely ground coffee beans
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/4 cups all purpose flour

 

Preparation

Preheat oven to 350°F. Spray 13x9x2-inch metal pan with nonstick spray. Combine sugar, butter, cocoa, ground coffee, and salt in large metal bowl. Place bowl over saucepan of simmering water and whisk until butter melts and ingredients are blended (texture will be grainy). Remove bowl from over water; cool mixture to lukewarm if necessary. Whisk in eggs and vanilla. Sift flour over and fold in.

Spread batter in prepared pan. Bake brownies until tester inserted into center comes out clean, about 25 minutes. Cool brownies in pan.

Note: the original recipe includes pecans in the brownies and a mocha frosting, but I thought the brownies were good as is.

Foodie Pen Pal

This month I became a part of the foodie pen pals. This is, yes, another food (blogger) community that I became a part of; it was started by Lindsay from The Lean Green Bean. It is a group of bloggers (or non-bloggers) who are paired up to receive and give a foodie package and letter. This month, I was paired up with and sent goodies to Erika from MCM Mama; head on over there to see what I sent her! I got paired up with a non-blogger, Mandy, who sent me goodies from Louisiana.

Mandy sent me a little card with the package describing what was included. She sent two mini pumpkin nutella loaves, coffee from Cafe du Monde with chicory and an alligator shaped cookie cutter. She says, “Since I moved here last fall, I’ve been hoping to happen upon a gator (while in my car of course) but it has yet to happen.”  Thanks again, Mandy!

I’ll have to make some cookies soon because I now have an alligator shaped cookie cutter and a camel shaped cookie cutter. What type of cookies do you think I should bake? Maybe these funfetti cookies?

I also now want to make coffee ice cream and try making coffee bacon. Funny, I sent coffee in my package as well, thinking about all of the things you can bake with coffee. Just in case, like me, they don’t drink coffee. Now to find a way to brew coffee without a coffee maker…anyone know how? Or just find recipes that use the coffee beans/grounds.
